Glutenvrije bloem reageert niet hetzelfde als tarwebloem of bloem die gluten bevat. Bloem met gluten <span class=\"s1\">zorgt voor structuur en elasticiteit, met name tarwebloem dat<\/span><span class=\"s2\"> consistent en door het gluten vormt de structuur van het deeg zich vanzelf.<\/span><\/p><p>Versus bakken met glutenvrij meel, dat gemaakt is van mengsels van rijstmeel, zetmeel en bindmiddelen (zoals xanthaangom). Het resultaat kan een gummi-achtiger textuur en dichter zijn.<\/p><p>Mijn ervaring met glutenvrij meel is dat het de eerste keer mislukt. Je moet verschillende recepten uitproberen. De sleutel is om elke cup, theelepel, eetlepel en ons exact af te meten. Laat het beslag 15 minuten rusten en meng het goed. Volg het recept nauwkeurig en het zal je lukken.<\/p><p>Mijn eerste succes is het bakken van glutenvrije muffins. Je vindt verschillende recepten in de glutenvrije sectie van deze website. Het bagelrecept dat ik hier deel, was een verrassend succes. Een knapperige korst met een binnenkant die licht dicht, taai en luchtig is.<\/p><p>In dit recept zijn de ingredi\u00ebnten eenvoudig. Ik gebruik Bob's Red Mill All Purpose baking flour. Voor veganisten kun je zuivelvrije Griekse yoghurt gebruiken.<\/p><p>De bagel komt oorspronkelijk uit Polen en het is in Joodse families een traditie om hem op zaterdag te eten. Het is een basisvoedsel geweest voor de Asjkenazische Joden in Oost-Europa. Vaak was het een eenvoudig recept met ingredi\u00ebnten zoals bloem, water, gist en zout. Er zijn enkele musea gewijd aan bagels in Londen en New York als je ge\u00efnteresseerd bent in de verdere geschiedenis.<\/p><p>Hier in de Verenigde Staten kunnen we allemaal naar de hoek van de straat lopen en bagels halen met lox en roomkaas of elke topping die je wilt.
