Het was er altijd regenachtig en koud. Ik was dagenlang alleen aan het wachten tot mijn vriend thuiskwam. Om de tijd te doden, liep ik naar de plaatselijke supermarkt en kocht uien, wortelen en linzen.<\/p><p>Hier aan de rand van de stad probeerde ik mijn eerste linzensoep. Het was stevig en verwarmend. Ik besloot te experimenteren met verschillende recepten voor linzensoep. Het onderstaande recept is snel, gemakkelijk en lekker.<\/p><p>Linzen komen oorspronkelijk uit het Midden-Oosten, reisden naar Spanje en vervolgens door heel Europa. Deze verschillende culturen hebben elk hun eigen smaken toegevoegd.<\/p><p>Linzen zijn rijk aan eiwitten en vezels en boordevol voedingstoffen zoals magnesium, kalium en zink. De peulvruchten zijn rijk aan polyfenolen die sterke antioxiderende en ontstekingsremmende effecten hebben.<\/p><p>De linzen die in dit recept gebruikt worden, zijn rode linzen. Ik heb dit expres gedaan omdat ze sneller gaar worden.<\/p><p>Dit gerecht is glutenvrij, veganistisch en zuivelvrij. Het is perfect om te eten als je eiwitten nodig hebt. Het is budgetvriendelijk.<\/p><p>Dingen om erbij te eten? (voor hongerige magen)<br \/>Salade, fruit en als dessert pudding, als je wilt. Ik neem meestal geen crackers bij deze soep, want hij is erg vullend.
