De smaak is rijk en romig en dit recept is gemakkelijk en snel te maken. Een exquise maaltijd om te serveren als u gasten heeft, die waarschijnlijk denken dat u uren in de keuken stond.\u00a0<\/p><p>Risotto is ontstaan in Noord-Itali\u00eb. Dit populaire gerecht wordt gemaakt met een speciale kortkorrelige rijst, die in Itali\u00eb wordt verbouwd. Verschillende soorten risottorijst zijn Arborio, Carnaroli en Vialone Nano. Na verloop van tijd hebben verschillende regio's hun eigen risotto's gecre\u00eberd. Risotto ai Frutti di Mare komt uit kustgemeenschappen, Risotto alla Milanese uit Milaan en Risotto ai Funghi (paddenstoelen) uit Piemonte. Dit recept voor truffel- en paddenstoelenrisotto dat ik met u deel, is gemaakt met Arborio omdat de rijst gemakkelijk vocht opneemt en daardoor zetmeel, amylopectine, afgeeft, wat het gerecht romig maakt.<\/p><p>De techniek bij het maken van risotto is de kunst van het langzaam koken \u2013 bouillon beetje bij beetje toevoegen terwijl je roert. Ik denk altijd aan autorijden als ik dit gerecht klaarmaak. Roeren niet te snel en niet te langzaam, vloeistof toevoegen wanneer je merkt dat het nodig is en ervoor zorgen dat de hitte niet te hoog is, zodat de risotto niet aanbrandt. Je kunt een blikje of een potje kopen in de reguliere supermarkten. Voor de witte wijn kun je een Sauvignon Blanc of een Pinot gebruiken.\u00a0<\/p><p>De Parmezaanse kaas wordt op het laatst toegevoegd voor het serveren zodat deze zacht smelt, hoewel sommigen er de voorkeur aan geven om meer Parmezaanse kaas als topping toe te voegen, zoals je op de foto's ziet.<\/p><p>Bak de champignons apart en voeg ze vlak voor het serveren toe. Als je gasten hebt, is mijn suggestie om de risotto op het laatste moment te maken. Het is het beste om het vers te proeven.\u00a0<\/p><p>\u00a0Je kunt risotto serveren met salade of gegrilde groenten, een lichte prote\u00efne bijgerecht zoals gestoomde vis of een citroenkip salade. Ik eet risotto het liefst solo, met rucola en olijven voeg je die bittere, pittige smaak toe. Je kunt restjes invriezen voor de lunch en als je het in de koelkast bewaart, geef het dan bij voorkeur de dag erna.
