Ik heb ontdekt dat het comfort food is. Een gezondere keuze, denken de meeste mensen, dan koffie met een gebakje als ontbijt.<\/p><p>Maar zijn ze echt zo gezond? Beladen met suiker, simpele koolhydraten en hoog in calorie\u00ebn (450 tot 500) bij gebruik van veel boter en eieren. Het goede aan muffins is dat je de slechte ingredi\u00ebnten kunt vervangen door goede. Je kunt het geraffineerde meel vervangen door biologisch meel, zemelenmeel of glutenvrij meel als je gluten wilt vermijden. Je kunt boter vervangen door plantaardige olie. Je kunt het\/de ei(eren) vervangen door een banaan of appelmoes. Je kunt geraffineerde suiker vervangen door ruwe suiker, kokosbloesemsuiker of een biologisch suikervervanger.\u00a0<\/p><p>Ik heb veel verschillende soorten muffins gemaakt om de resultaten te zien en te proeven. Geweldig hoe ik muffins ben gaan waarderen. Een van de beste zijn deze blauwe-muffins gemaakt van havermeel. Ik kocht per ongeluk havermeel in de veronderstelling dat het glutenvrije bloem was. Havermeel is van nature glutenvrij, maar het kan tijdens de oogst, het transport en in machines besmet raken met tarwekorrels. Daarom is het een gezondere keuze. Dit was de eerste keer dat ik iets met havermoutbloem maakte en ik was verrast hoe vochtig het kan worden tijdens het bakken. Als je dit recept precies maakt zoals hieronder beschreven, komt het er zacht en smeltend in je mond uit. Ik heb het geprobeerd zonder de bosbessen (sommige kinderen houden niet van bosbessen in hun muffins), maar de bosbessen geven het die speciale smaak, waardoor deze muffin buitengewoon is. Houd dus de bosbessen erin en maak een ander muffinrecept voor kinderen.<\/p><p>Dit recept gebruikt geen eieren of boter. In plaats daarvan kokosolie en een gepureerde banaan. Toch, wanneer je het proeft, heeft het dezelfde vochtigheid en luchtigheid als een muffin gemaakt met boter en eieren.<\/p><p>Perfect voor het ontbijt of als tussendoortje. Je kunt deze muffins twee tot drie dagen bewaren als je ze in een afgesloten bak in de koelkast bewaart. Als je een muffintje van een dag oud 15 seconden in de magnetron legt, heeft het weer de smaak van vers uit de oven.\u00a0<\/p><p>Het kostte me niet lang om dit te maken.
