Preheat the oven 350°F. Add parchment paper on a small baking sheet.
Add all the dry ingredients except the banana in a small bowl.
Add the hot water. Oatmeal mixture will get nice and soft. Stir ingredients well.
Now add the smashed banana and blend well.
Optional. Add 1/3 cup dry roasted sliced almonds.
Using an ice cream scoop spoon and add the mixture to the baking sheet.
This recipe makes about 8 to 10 oatmeal rounds depending on the size of the spoon. With a fork, smash the round dough until flat. Put it in the oven for 30 minutes.
Notes
You know when the breakfast rounds are done when it looks golden and a little crispy. If you bake them too long they will get dry and hard.
